We decided to get a share of our community supported agriculture back in June. I've been trying to incorporate all of the veggies that we are given in our box in our daily meals. It is hard to be creative. However, I am making a lot of colorful salads, sauteed and roasted veggies. It is lovely.
The downfall is not knowing what to do with some of the veggies because I can't figure out more ways to eat beets, and my healthy eating goals limits my ability to make a beet cake. If you have any tips for beets, please send them my way.

ReplyDeleteBeet salad with goat cheese and spinach is great. I had roasted beets at a restaurant, which is fantastic. And I supposed you could find a recipe for bortcht Ispelling?) which is beet soup.
ReplyDeleteI am seconding Lynda's recommendation of roasted beets. I just used the ones in our CSA box that way. I first par-boiled them in the microwave with a little water (just to save time and not heat up the house too much; if you've got the time you can do all of the cooking in the oven). Take the beets out of the microwave and let cool enough so that you can peel and chop them into bite-sized chunks. Next toss those partly cooked chunks with sliced shallots, orange zest, a small amount of salt and a tiny bit of olive oil. Roast at 400 until soft and splash with a healthy does of red wine vinegar before they cool. Serve warm, room temp or cold. So yummy.

Grater raw like carrots and add to salad maybe?
